Vanilla Fruit Cake - Recipe
Ingredients
Cake:
- 2 cups plain / all purpose flour (cake flour OK too
- 2 1/2 teaspoons baking powder (check it's still active)
- 1/4 tsp cooking salt
- 4 eggs (50 – 55g / 2 oz each), at room temperature
- 1/2 cups granulated/regular sugar
- 115g / 1/2 cup unsalted/ salted butter
- 1 cup of milk (2%, 3%)
- 3 tsp vanilla extract , the best you can afford!
- 3 tsp vegetable or canola oil
- 1 tsp of gelatin
- 1 tbsp of cold water
- 1 cup of heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Whipping cream:
Fruits: Anything you want!!
